
The Dutch Oven Cookbook began over a Parents
Committee's concern regarding some of the menus and resulting meals on our monthly
campouts. Some Patrols were not preparing the meals that had been approved by the Senior
Patrol Leader while other Patrols were not properly preparing their approved meals. This
practice resulted in raw and undercooked food, junk food and soda pop on campouts, and
Scouts eating unprepared powdered soup and drink mix. Due to the health and safety
concerns of the Parents Committee, they mandated that all patrols prepare meals from an
initial set of about 15 menus. Additionally, some food and drinks which had been abused
were banned from our campouts. This set of menus grew over a period of 5 years of
compiling, testing, tasting and coordinating recipes from many sources. Many different
recipes have made their way into many troop campouts to provide a delicious, healthy,
filling meal. The outcome of this excercise is that we now have a Cookbook which we use as
a fundraiser and a Troop of fine Dutch Oven cooks from the newest Tenderfoot to any one of
our Eagles.

Our cookbook results from many years of recipe collecting. The first
recipes came from Lamar Haines of Flagstaff, Arizona. Lamar was involved in
many youth activities. He was an educator for the Flagstaff School System and a
recipient of the Silver Beaver Award of the Boy Scouts of America. A portion of the
proceeds from this cookbook are donated in his memory to the Lamar Haines Nature Study
Area in Snowbowl, just north of Flagstaff.
